This is a pardoxical situation for a plant that is propagated vegetatively and was imported from Latin America. Where did this remarkable diversity come from and how do producers make use of it? Researchers from CIRAD and CEFE recently showed that most of the varieties were bred locally from plants resulting from sexual recombination that appeared spontaneously in plots.       Cinnamon is OK in limited quantities as long as it’s Cinnamomum zeylanicum, not Cinnamomum cassia, which contains enough coumarin to damage the liver and kidneys.

      I personally think cinnamon’s health-promoting qualities are overrated compared to its therapeutic index.

      Often, “The more specific the effect, the more toxic the herb or drug,” although many pharmacists and herbalists will argue the opposite.

      The therapeutic index of a food is usually lower (often much lower) than that of an herb.

        Cinnamaldehyde is used as an insecticide, fungicide, and corrosion inhibitor, besides being used as a flavor, fragrance, and drug,

        Cinnamaldehyde allegedly gives cinnamon its flavor and odor.

        But does that apply to all six cinnamon chemotypes? …

        1) cinnamaldehyde type

        2) cinnamaldehyde/cinnamyl acetate type

        3) cinnamyl acetate type

        4) linalool type

        5) camphor type

        6) mixed type

        Here’s hoping the 19-year-old amateur herbalist behind the counter of your local health food store knows what chemotype he’s selling you.
